Recipes!

Hello everyone! My cousin Candi added a few recipes to her blog, so I thought I would add a few of mine too. I'm always trying new things, so if you have any good recipes, send them my way!

Brittany's Buttercream Dream Icing
Ingredients
1 stick salted butter - room temperature
1 stick unsalted butter - room temperature
1 cup shortening
1 tablespoon Clear Vanilla extract
2 pounds confectioner's sugar (powdered sugar)
4-6 tablespoons very cold milk

Directions
Cream the butter and shortening in the bowl of an electric or stand mixer. Add the clear vanilla extract and combine well. Begin adding in the sugar and mixing thoroughly after each addition. After all of the sugar has been added and mixed thoroughly, begin adding the very cold milk... one tablespoon at a time, combining very well after each addition (mixer on medium-high to high speed) until you reach the desired consistency. This makes a LOT of icing, but you can put the extra in a container and store it in the fridge until next time :)

BBQ Pulled Chicken (Slow Cooker)
Ingredients
1 8oz can tomato sauce
1 tblspn tomato paste
3 tblspns cider vinegar
2 tblspns honey
1 tblspn sweet paprika

2 tblspn minced onion
2 tsp dry mustard
1 tsp ground chipotle chile
1/2 tsp salt
1 clove garlic- minced
1 lb boneless chicken breast
Hamburger buns

Directions
The best thing about this recipe is that it is all donein the slow cooker!! Stir all ingredients in mixing bowl. Transfer to slow cooker and add chicken. Cook on low for 5 hours. Take out chicken and pull apart with fork. Return to sauce and serve on buns. A favorite in the Jeanes house!

Saucy Meatballs (Slow Cooker)

1 package stuffing mix for turkey
1 egg-lighly beaten
1/2 cup water
1 cup sliced mushrooms (optional)
1 jar spaghetti sauce
1 package angel hair pasta
1/3 cup parmesan cheese

Directions
Combine stuffing, meat, egg and water in bowl. Shape into balls and place in slow cooker. Top with mushrooms and spaghetti sauce. Cook on low for 5 hours. Before serving, cook pasta as directed, and serve under meatballs. Sprinkle with cheese. (Candi, this recipe is really good, I think your family would like it!)

Well, that's all of my specialties for now! :)
